Stewing Hens are older laying hens that just don't lay many eggs, or any at all, any longer. They are the very best for making broth and soup. Your broth will be a rich golden color. They're called stewing hens because that's exactly how you cook them, by stewing. A technique that will tenderize the meat as it is completely submerged in water and the very gently simmered, so gentle you barely see any bubbles coming up in the water. Do this for about 1-1/2 hours with the hen, and then you can take it out of the water and cool it enough to handle and pick off all the meat. Cut the meat across the grain into small bite sized pieces and save in the refrigerator to add back to soup, or use for classic chicken salad, or some of each. You can put all the bones and skin and all back in the broth a simmer gently an hour or two more to make a bone broth.
